It’s 8AM and actually warm outside (in the sunshine) — I love May!
After kicking the kids upstairs to go get themselves dressed, I quickly fried-up some Avocado & Bacon soldiers for us to have in the garden before school.
I originally thought of wrapping the bacon around garlic bread fingers, and think still that might be yummy, but after discovering two left over avocados at the back of the fridge inspiration hit!
The best breakfasts are always the simple ones.
And eating this in the garden with the kids, amongst the long early-morning shadows was really special.
- 4 eggs
- oil for frying
- 1 avocado, sliced
- 100g smoked, streaky bacon
- Bring a large pan of water to the boil, add the eggs and cook for 4 minutes, or to your preferred time.
- Meanwhile, wrap each slice of avocado in a rasher of streaky bacon, heat a small amount of oil in a frying pan and cook on a high heat for around 3 minutes, until crispy.
- enjoy the avocado soldiers dipped in the eggs.
