This is River’s favorite of all the Overnight Oats I’ve rustled up lately. It’s jammed with great flavors and has been the perfect energizing start to these cold and dark January mornings. Having been known to devour seven rounds of peanut butter on toast at breakfast, this satisfies the boy’s peanutty cravings but also makes him feel fuller for longer.
And it couldn’t be simpler to make — just throw the 4 ingredients together in a jar the evening before, leave in the fridge overnight, and then chow down the following morning.
A super easy and totally delicious breakfast, ideal for on the go and getting your through ’til lunch.
- 70g (1/2 cup) rolled oats
- 120ml (1/2 cup) unsweetened almond milk
- ½ banana, chopped
- 1 tbsp peanut butter
- 1 tsp honey
- Place all ingredients into a clean jar, pop the lid on TIGHT and shake until thoroughly mixed.
- Leave in the fridge overnight, to be enjoyed in the morning -- hot or cold.
